Banana Muffins with Pecan Topping
1 3/4 cups unsifted all-purpose flour
3 sp baking powder
1/2 tsp salt
1 egg
3/4 cup mashed banana (2 medium side bananas)
1/2 cup milk
1/4 cup vegetable oil
1/2 cup maple flavored syrup
Brown sugar
Chopped pecans
Preheat oven to 400掳
Grease only bottoms of twelve muffin pan cups or use paper liners.
Stir together flour, baking powder and salt in large bowl.
Lightly beat egg in medium sized bowl. Stir in masked banana, milk, oil and maple syrup.
Pour liquid ingredients all at once into dry ingredients. Stir mixture briskly with fork until moistened; do not over stir. Batter will look lumpy.
Fill each muffin cup 2/3 full with batter. Sprinkle tops with mixture of brown sugar and chopped pecans.
Bake for 22 to 24 minutes. Remove pan to wire rack. Remove muffins at once and serve piping hot.Healthy banana muffin recipe that uses baking powder instead of soda?

Wheat Germ and Banana Muffins
1 1/2 cups all-purpose flour (used 1/2 cup white, 1 cup whole wheat)
3/4 cups sugar (have substituted with Splenda)
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3/4 cup toasted wheat germ
1 1/2 cups mashed ripe bananas (about 3)
1/2 cup milk (have used nonfat milk)
2 large eggs (have substituted with 1/2 cup egg substitute)
1/3 cup vegetable oil (have substituted with unsweetened applesauce)
1 teaspoon vanilla extract
Preheat oven to 400掳F.
Line 16 muffin cups with muffin papers (optional) or grease muffin cups.
Add dry ingredients (flour, spices) into medium bowl. Mix in wheat germ.
Combine bananas, milk, eggs, oil and vanilla extract in large bowl and whisk to blend.
Mix in dry ingredients. Spoon batter into prepared muffin cups, dividing equally.
Bake muffins until tops are golden brown and tester inserted into center comes out clean, about 25 minutes.
Note:

i cheat when making banana bran muffins... i get one of those jiffy boxes of bran muffins, where you just add eggs and milk, then add 3-4 mashed ripe bananas. bake as directed. they come out so tasty, and are easy to make bc the mix already has the baking pwder and other needed ingredients in it.
I usually just substitute backing powder for soda because I don't like the taste of soda....
