Healthy cupcake recipe for mothers day?

my mum is on a diet but i wanted to make her some cupcakes. does anyone know a recipe for the healthiest cupcakes( fairy cakes). If you can could you include the nutritional infomation. and how many it makes. (and a pic so i kinow what they are MEANT to look like) . tyHealthy cupcake recipe for mothers day?
Ingredients


2 large eggs, cracked open


125g/4oz caster sugar (healthy option would be sweetener)


125g/4oz soft margarine (get the i cant believe it's not butter light)


125g/4oz self-raising flour








Method


1. Heat the oven to 180C/350F/Gas 4. Put all the ingredients in a bowl and beat them together until the mixture is smooth and slightly lighter in colour.


2. Line a bun tin or cupcake tin with paper cake cases and half-fill each case with the cake mixture.


3. Cook the cakes for 18-20 minutes. You can tell they are done when they have risen up, are golden in colour, and spring back into shape when lightly pressed.


4. The cupcakes can be decorated using a basic icing, plus marshmallows, writing icing, food colouring and coloured sweets. You can even make a cupcake farm with animals such as sheep, piglets and dogs.Healthy cupcake recipe for mothers day?
Low Fat Lemon Cupcakes


Makes 12 cupcakes.





Ingredients


1 3/4 cups white flour


1 tsp baking soda


陆 tsp baking powder


陆 tsp salt


陆 cup unsweetened applesauce


陆 cup white sugar or sugar substitute


1 Tbsp vegetable oil

1 cup fat-free sour cream


1/2 lemon, juice and zest of


Instructions


Preheat oven to 350 degrees Fahrenheit. Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar. Add egg and beat well, then stir in lemon zest and juice. Alternately stir in flour mixture and sour cream in stages, then divide among 12 paper-lined muffin cups. Bake 20-25 minutes or until toothpick inserted in the center of one cupcake comes out clean.








Low-Fat Cream Cheese Frosting


Ingredients


3/4 cup fat-free vanilla yogurt


3/4 cup fat-free small curd cottage cheese


16 oz Neufchatel or low-fat cream cheese


1 cup powdered sugar


Instructions


Place yogurt and cottage cheese together in food processor and process until smooth. Cube cream cheese and add to processor, processing again until smooth. Add sugar in three parts, processing to mix between additions

Take a regular package of chocolate cake mix and add 8 ounces of diet coke to it.
