LIGHT CHOCOLATE CAKE





1 1/4 Cup plain flour


1/3 Cup cocoa powder


1 teaspoon baking soda


6 Tablespoons Smart Balance, or light spread


1 Cup sugar


1 Cup skim milk


1 Tablespoon white vinegar


1/2 teaspoon vanilla





Preheat oven to 350. Spray two 8'; or 9'; round pans generously with cooking spray (can also use a tube cake pan). Whisk or sift together the flour, cocoa, and baking powder. Set aside. In large saucepan, melt Smart Balance; stir in the sugar. Remove from heat and whisk in the milk, vinegar, and vanilla. Whisk flour mixture into the liquid thoroughly. Bake 20 minutes for 8'; rounds, 15-18 minutes for 9'; rounds, and 25-30 minutes for tube pan. Test for doneness by inserting a toothpick - it will come out clean. Refrigerate.





LIGHT COCOA WHIPPED FROSTING





1 (1.3 ounce) envelope Dream Whip*


1/2 Cup cold skim milk


1 Tablespoon cocoa powder


1/2 teaspoon vanilla





Combine in small metal or glass mixer bowl. Stir until blended. Beat on high/whip with an electric mixer until soft peaks form -- approximately 4 minutes. Spread on cooled cake. Refrigerate.





*Dream Whip is usually near the pudding and pie mixes or near the cake mixes. Each box contains either two or four 1.3 oz envelopes of Dream Whip.





The cake and the frosting are cholesterol free and low in fat. You can use Splenda to make it even more low-cal. The recipes are great for making ice cream cake, so you can even add a layer of low-fat, low-cal ice cream in between the layers. Remove it from the freezer for about 15-20 minutes before you want to slice it.Healthy Birthday cake recipes.... with few ingredince?
You can use this recipe, substituting any fruit puree in place of the pumpkin (apple sauce, mashed banana, etc.), if you don't like pumpkin.

Bake it in round pans instead of loaf pans and adjust the baking time to less (not sure how much less, though)





You could use fruit preserves as a filling between the layers and use a fat free whipped topping made from skim milk as the frosting if you are concerned about fat content.

Or you could frost it with pure peanut butter, for a very healthy, high protein cake if you are not worried about fat.

If you want to use a cake mix this is a fairly ';healthy'; version.


1 Box cake mix, your choice of flavor.


1 Can diet soda, flavor to go with cake flavor.


Prepare cake pans as directed on box.


Pre heat oven as directed.


I like to use the bundt pan because I do not have to use a lot of frosting, just a dusting of powdered sugar or a light glaze is all you need.


Pour cake mix into bowl.


Add the can of diet soda and stir until well mixed.


Pour into prepared pan and bake according to directions.





his cake is pretty moist and tender. It has a tendency to crumble a bit more than normal.

I don't know of any specifically but box mixes always taste good. My aunt who is a health-freak sometimes substitutes honey for sugar. I don't remember which desserts of hers i've tried with honey but I think it's good.


You could also make a giant chocolate chip cookie cake and decorate it with frosting just put the dough in a baking dish instead of little globs on a baking sheet/pan.
