Good healthy recipe ideas???

Looking for some simple but tasy recipe ideas that are low in fat and sugar and are easy to do when i come home from work





I get home from work about 6.30 7 so i want something tasy but not going to take me all nite and something that requires little washing up!! lolGood healthy recipe ideas???
Ive just started Slimming World and discovered Cous-Cous. Its my new favourite fast food, much quicker and easier and less messy than rice.





Just put some into a bowl, add boiling water from the kettle (to cover) put a lid or a plate over the bowl and leave it! I add a chicken stock cube for flavour and have just made myself some for lunch with a tin of red kidney beans, some onion, tomatoes and cucumber - its delicious. You could serve it with pretty much anything, grilled or steamed meat or fish and some salad or veggies.





I also like to cook healthy curries, very quickly dry fry some spices (whole or buy a curry powder mix) add some onions, and then add whatever you like - I buy diced turkey from the supermarket - its low fat and so tasty, but when I don't have that I use a casserole veg pack (frozen) and just add this.





Then add a tin of tomatoes and a bit of water if it needs it, and leave until the meat/veg are cooked. Then serve!





Nice and simple and only 1 pan to wash up!Good healthy recipe ideas???
Stir-fried Chicken with Lime and Coconut


Ingredients


2 Traditional Free Range boneless, skinless chicken breasts


grated zest and juice 1 large lime


5 fl oz (150 ml) tinned coconut milk


1 dessertspoon olive oil


1 green chilli, deseeded and finely chopped


1 dessertspoon Thai fish sauce


4 heaped tablespoons fresh coriander leaves


4 spring onions, cut into 1 inch (2.5 cm) shreds, including the green parts


You will also need a frying pan with a diameter of 10 inches (25.5 cm), or a wok.





First of all chop the chicken into bite-sized pieces and place them in a bowl with the lime juice and zest. Stir well and leave them to marinate for an hour.


When you're ready to cook the chicken, heat the oil in the pan or wok over a high heat, add the chicken pieces and stir-fry for 3-4 minutes, until they're golden. Then add the chilli, stir-fry for 1 more minute, and add the coconut milk, fish sauce and half the coriander and spring onions. Cook for another 1-2 minutes, then serve with Thai fragrant rice and the remaining coriander and spring onions sprinkled over.





Or Roasted Red Peppers Stuffed with Fennel


Ingredients


4 large red peppers





2 small bulbs fennel


1 x 14 oz (400 g) tin Italian plum tomatoes


8 dessertspoons extra virgin olive oil


1 rounded teaspoon mixed pepper berries


戮 level teaspoon whole coriander seeds


陆 level teaspoon fennel seeds


juice 陆 lemon


finely chopped spring onion for garnish (optional)


sea salt


Pre-heat the oven to gas mark 4, 350掳F (180掳C).





You will also need a shallow baking sheet (I use a Swiss-roll tin).


Slice each pepper in half lengthways, cutting right through the green stalk end and leaving it intact; though it won't be eaten, it adds much to the look of the thing. Remove all the seeds. Place the pepper halves on the baking sheet, then drain the tomatoes (you don't need the juice), and divide them into eight equal portions, placing each portion inside a pepper half.





Now pare off any brownish bits of fennel with your sharpest knife and cut the bulbs first into quarters and then again into eighths, carefully keeping the layers attached to the root ends. Now put them in a saucepan with a little salt, pour boiling water on them and blanch them for 5 minutes. Then drain them in a colander and, as soon as they're cool enough to handle, arrange two slices in each pepper half. Sprinkle 1 dessertspoon of olive oil over each one, using a brush to brush the oil round the edges and sides of the peppers.





Next, lightly crush the pepper berries, coriander and fennel seeds with a pestle and mortar or rolling pin and bowl, sprinkle these evenly all over the fennel and peppers, and finish off with a grinding of sea salt. Then bake the peppers for about 1 hour on a high shelf in the oven until they are soft and the skin wrinkled and nicely tinged with brown. After removing them from the oven, sprinkle the lemon juice all over, cool and serve garnished with a little finely chopped spring onion or as they are

Asian food- quick, simple, healthy yummy!
Stir-frys are hard to beat. You can use all your fave veg and add chicken, prawns or lean beef if you like. A little soy sauce adds flavour. They are so quick - cook in minutes. Serve with wholegrain rice or pasta. Lovely ! Just the knife, wok, spatula and saucepan from the rice or pasta to wash.
Salads are the best and so simple---tomatoes, cucumber, different types of lettuce, peppers, beans (not the tinned kind, I mean like butter beans and so) all sprinkled with crushed black pepper....very quick, very easy. If that is not filling enough add some meat like chicken or serve with bread.
smoked salmon with fennel salad:you just need to take yhe salmon out of the packet,little lemon juice on it and a bit of extra virgin olive oil.as a side dish the fennel cut thin with lemon juice and oil.very fast,easy and healthy!grilled chicken with tomato salad.
Incredible Turkey Meatloaf

3 cups chopped yellow onions (2 large onions)


2 tablespoons good olive oil


2 teaspoons kosher salt


1 teaspoon freshly ground black pepper


1 teaspoon fresh thyme leaves (1/2 teaspoon dried)


1/3 cup Worcestershire sauce


3/4 cup chicken stock


1 1/2 teaspoons tomato paste


5 pounds ground turkey breast


1 1/2 cups plain dry bread crumbs


3 extra-large eggs, beaten


3/4 cup ketchup





Preheat oven to 325 degrees F.


In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.





Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
buy 5oog of diced beef and put it into a large pan, chop up potatoes and carrots and dice an onion into large chunks and shove it all into a large pan- add water and boil it up to 1 hr, after an hour add a little pepper and gravy granuels- not too much and stir it up to 20mins and you have a lovely stew. you can buy a packet of dumplins to go with it.





It thats too long for you, try a chilli con carne and instead of buying it from a jar or making it from scratck, buy a sachet of the powder as its yummy. Take up to 20mins.





Or... buy some belly pork 500g from a butchers and fry it in a pan with a red and green pepper, onions and carrots. Buy a sachet of chineese style flavouring and add into the pan. It'll take about 10mins to fry. After about 10-15mins add some egg noodles with it and you have a grat srir fry.

The quickest thing to cook that is also tasty and easy has to be fish. Salmon fillets are dellisious and so easy to cook. Literally under the grill for a few minutes. Just have it with new potatos and vegetables and then some sauce, such as hollandaise. Tuna is also excellent and very quick, and you can have that with some salsa or something. Fish is just so quick to cook and really good for you, so I'd definately opt for something like that.





Or if you want one pot food to reduce washing up, cook a chilli or spag bol or something. Pasta and sauce is always lovely too.
