Does anyone have a recipe for healthy alfredo sauce???

I am on a diet and would really like to enjo my favorite food so need a health concience one thanks a millDoes anyone have a recipe for healthy alfredo sauce???

1 (12 ounce) can evaporated skim milk


2 tablespoons grated nonfat parmesan cheese


3 tablespoons butter-flavored sprinkles


1/4 teaspoon white pepper


6 tablespoons grated nonfat parmesan cheese


1/4 cup sliced scallions (garnish)


2 tablespoons chopped fresh parsley (garnish)

In a saucepan, combine the evaporated skimmed milk, 2 tablespoons grated nonfat Parmesan cheese, 3 teaspoons butter-flavored sprinkles and 1/4 teaspoon ground white pepper.


Stir well. Cook on med-low til sauce is heated through.


Gently stir in 10 oz of cooked, drained fettuccine pasta.


(Add a little more milk if it seems too dry.) Remove pot from heat and add the remaining 6 tablespoons grated nonfat Parmesan and toss.


Garnish with scallions and parsley.

2 tbsp butter


2 tbsp flour


1 can evaporated skim milk


1 cup fat free chicken stock


1/2 cup egg beaters


1/4 cup reduced fat Parmesan cheese


nutmeg


salt and pepper





Build a blond roux in a medium, nonreactive sauce pan. In another pot, scald the milk. Heat up the stock. Gradually add the stock to the roux over medium heat, whisking well. when all in, gradually add the milk. Reduce by half, skimming scum and fat from the surface.





Beat the egg beaters till frothy. Temper the liquid into the eggs, return to low heat (or over a double boiler). Add the cheese. Season to taste. Might need alot.
