Healthy Muffin Recipe?

I love baking muffins, but my mom and dad are starting to watch their weight and don't eath the muffins I mke them anymore. Does anyone have a simple, healthy, muffin recipe that has hardly or no fat at all and low in calories?Healthy Muffin Recipe?
WAKE UP HEALTHY MUFFINS





2 c. flour


1 c. wheat germ


3 tsp. baking powder


2 tsp. cinnamon


1 tsp. pumpkin pie spice


1/2-1 tsp. salt


3/4 c. oil


4 lg. eggs


1 3/4 c. sugar


2 tsp. honey


2 c. grated carrots


1 c. grated zucchini


3/4 c. raisins


1/2 c. crushed pineapple, drained





Sift dry ingredients together and set aside. Put eggs in large bowl and beat lightly. Add oil, sugar, honey and mix well; then add rest and mix well. Add dry flour mix to egg mix and mix only until moist. Fill muffin tins 2/3-3/4 full. Bake at 350 degrees for 20-25 minutes. Makes 24 large or 30 regular muffins.














HEALTHY MUFFINS





2 cups rolled oats鈥?br>

1 cup whole wheat flour鈥?br>

1/4 tsp salt (as desired)鈥?br>

1/2 tsp cinnamon鈥?br>




Mix and add鈥?br>

1/3 cup water鈥?br>

1 beaten egg鈥?br>

1/2 cup vegetable (or canola) oil鈥?br>

1/2 maple syrup鈥?br>




Mix and stir in鈥?br>

1/2 cup walnuts鈥?br>

1/2 cup raisins鈥?br>




Spoon into greased muffin pan鈥?br>

Bake 350 for 20 minutes鈥?br>

Let cool remove and serve














I haven't made the second recipe before, but the first is DELICIOUS I make it all the time! Use LOTS of grated zucchini, it makes it soooo sweet. Remember to use whole wheat flour. Also, ONLY USE EGG WHITES. The white of the egg is protein (good), but the yolk is cholesterol (bad!). The best ratio to use is 2 egg whites = 1 egg. So if the recipe calls for 2 eggs, you use 4 egg whites! Easy enough. If you don't want to do that, you can buy just egg whites at the store in a jug container.

Carrot and Cardamom Muffins.





1 big carrot grated


1/4 cup honey


2 tablespoons Macadamia oil.


1 cup orange juice


1 tablespoon grated orange peel


2 eggs


1 1/4 cup flour


1 teaspoon baking soda


1/2 teaspoon ground cardamom.





1.Preheat the oven and grease 12 medium size tins.


Mix carrot, honey, oil, juice, orange peel and eggs in a bowl.


2. Sieve flour, baking soda and cardamom and mix with the other ingredients softly until they are just mixed.


3. Fill your tins and bake for about 20 minutes or until they are golden brown. Wait five minutes before taking them out the tins and serve while they are still warm.
WEIGHT WATCHERS FRUIT SNACK MUFFINS





1 c. plus 2 tbsp. apple juice


3 pkg. Weight Watchers apple snacks


1 3/4 c. flour


2 tbsp. brown sugar(can use splenda brown sugar to save even more carbs)


2 tbsp. sugar or splenda sugar or baking


2 tsp. double-acting baking powder


1/2 tsp. baking soda


1/4 tsp. cinnamon


1/4 tsp. nutmeg


1/4 c. vegetable oil


1 egg


1/2 tsp. vanilla





Combine juice and apple snacks. Let stand 10 minutes. In a separate bowl sift dry ingredients together. In another bowl, beat oil, egg, vanilla and add to apple mixture. Stir until lumpy. Fill 12 paper-lined cups. Bake 15-20 minutes at 375 degrees. (1 muffin = 1/2 B, 1/2 Fr, 1 Fa, 40 O.C.)








WEIGHT - WATCHERS PUMPKIN MUFFINS





1 can pumpkin


2 eggs


2/3 c. powdered milk


6 tbsp. flour


2 tsp. pumpkin pie spice


1 tsp. cinnamon


1 tsp. baking powder


1 tsp. brown sugar substitute


4 env. artificial sweetener


1/2 c. grated carrots


4 tbsp. raisins (soaked in water until plump)





Mix ingredients and bake 15-20 minutes at 350 degrees.
Pear Bran Muffins





1 cup flour


1/2 cup sugar


2 %26amp; 1/2 tsps. baking powder


1/2 tsp. salt


1 %26amp; 1/4 cups whole bran cereal


1 can (16 oz.) Bartlett pears in natural juices


1/2 cup milk


1/4 cup oil


1 egg, beaten.





Combine flour, sugar, baking powder and salt. Drain and dice pears; combine with bran and milk. Let stand 5 minutes. Add oil and egg to pear mixture; add all at once to flour mixture. Stir only until dry ingredients are moistened. Fill greased muffin pans 3/4 full. Bake at 400 degrees F for 18 to 20 minutes or until wooden pick inserted near center comes out clean. Makes 1 dozen.

FAT-FREE BANANA MUFFINS





1 c. whole wheat flour


1/2 c. white flour


1/4 c. sugar


2 tsp. baking powder


1/2 tsp. baking soda


1/2 tsp. salt (optional)


1/2 tsp. cinnamon


2 egg whites


1 c. ripe banana, mashed


1/3 c. skim milk


1/3 c. corn syrup





Grease 12 muffin tin cups. Combine flours, sugar, baking powder, baking soda, salt and cinnamon and stir thoroughly. In a large bowl, beat egg whites lightly with a wire whisk or fork. Stir in mashed banana, milk and corn syrup. Add flour mixture and stir until well blended. Spoon into prepared muffin cups. bake at 400 degrees for 20 to 25 minutes or until firm to the touch. Cool in pan for 5 minutes, then remove and cool on a wire rack.
