Prepare some spiral pasta and toss with olive oil, parmesean cheese, and garlic. Use boca burger crumbles to make tocos. sautee mushrooms in olive oil and serve with zuccini, green beans, carrots, and rice steamed. Black beans and rice. Portobella mushroom burger. pineapple and cheddar cheese wrapped in lettuce (helps your cholesterol.)Please share some delicious and filling recipes with me....must be healthy!!!!! And vegetarian?

Stuffed peppers: red and yellow peppers, onions, mushrooms, Basmati rice, wild rice, salt, chili pepper, spices (cumin, celery seed, what ever spices you like), chopped fresh cilantro, mushroom broth, olive oil. (optional hard tofu or feta cheese)





Pre-cook the wild rice for 30 minutes, and saute your mushrooms and onions together.


Add 1 cup pre-cooked wild rice, 1 cup Basmati rice to 2 T olive oil, 1 tsp salt, 1/4 tsp chili pepper and 1 tsp of other spices you like. Add 1/2 cup of finely chopped fresh cilantro, 1 cup of sauteed mushrooms. Add tofu cut into tiny pieces or a bit of feta cheese if you allow cheese in your diet. Stuff your peppers with the mix so they are about 2/3 full. Fill each pepper with mushroom broth and then secure the top of the pepper back on with toothpicks. Place the peppers in a pot with mushroom broth to cover them by no more than an inch. They should be stacked so that they tightly fit into the pot and can't tip. Bring to a boil and then reduce the heat to medium low , simmering for 40 minutes with the top on the pot!





You can buy ';mushroom base'; in glass jars at a lot of supermarkets, or you can also use vegetable broth.

What about





one Mayan Sweet onion, cut up


one frozen bag Pepper Medley (Birds Eye I think)


slice up a potato that has been boiled to almost soft


Fry or stir fry in corn, canola or olive oil


Season with a little salt, onion powder.





I like to add Lea and Perrins but that has anchovies so maybe you don't want that. But a veg variation of something similar to lea %26amp; Perrins will help.





Safeway where I live has the best sweet Mayan onions that I've ever seen.

white rice with fried tofu and veggies. (if you don't fancy tofu you can always leave that out but it gives lots of flavor)





you cook white rice





you fry the tofu first until it's a golden/brownish color


you put in the vegetables.broccoli, carrots, chik'n strips (sub for tofu if you like) or whatever your tummy aches for.
