Spinach and Feta Pasta

Spinach, tomatoes, and mushrooms mingle with tangy feta cheese in this quick and easy dish for a summer night or anytime.

Original recipe yield: 4 servings.

INGREDIENTS:

1 (8 ounce) package penne pasta

2 tablespoons olive oil

1/2 cup chopped onion

1 clove garlic, minced

3 cups chopped tomatoes

1 cup sliced fresh mushrooms

4 cups chopped spinach leaves

salt and pepper to taste

1 pinch red pepper flakes

8 ounce feta cheese, crumbled

DIRECTIONS:

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.

Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted. Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.
try using wheat pasta as a substitute for the normal kind thats the only way to make it healthy otherwise it is all carbs and nothing else
pasta fredda con pomodori, mozzarella e basilico
I guess it's all healythy but try to avoid too much cheese, butter and other cholesterol-rich foods. These things tend to clog your arteries if taken too much.
This is fantastic. Discovered it when I was in Menorca on a windsurfing holiday. Ate it for a wekk every lunch time.

The secret of this dish is not to cook either the prawns or the mussels too much and to use a very good olive oil. The sauce is more or less olive oil and it is truly delicious. I guarantee it.
