Chewy Oatmeal Cut-Out Cookies





Ingredients


1 cup butter


3/4 cup brown sugar(or a little less)


1 large egg


2 teaspoons vanilla


3/4 teaspoon salt


1/2 teaspoon baking powder


1 teaspoon cinnamon


1/2 teaspoon ginger


1 cup rolled oats


1/2 cup whole wheat flour


2 cups all-purpose flour


cinnamon sugar (optional)


Directions


1Cream butter and sugar well, then beat in egg.


2Add the vanilla, salt, spices, and baking powder.


3Stir in oats and flours. (It will look dry at first, but it will come together.)


4Divide into two balls, flatten into disks and wrap each in plastic.


5Refrigerate for 1/2 an hour.


6Heat oven to 350 F


7Roll out each dough disk to 1/4 inch or so thickness, and cut as desired with sharp cookie cutters.


8Place on greased cookie sheet. (They don't spread so they can be close together.)


9Bake 12-15 minutes (less time for chewy, more time for crisp).


10Sprinkle with cinnamon sugar while still warm for easy decorating.


11Or frost and decorate as desired.

These cookies have a low-fat secret. They're full of beans! Idaho State University researchers in Pocatello replaced 75 percent of the butter with beans to create cookies with 105 calories and 3 fat grams (compared with 150 calories and 7 fat grams).


Vegetable-oil cooking spray


1 1/2 cups old-fashioned oats


2 cups all-purpose flour


1/2 tsp baking powder


1/2 tsp baking soda


1/4 tsp salt


3/4 cup drained great Northern, cannellini or any white beans, liquid reserved


3 tbsp butter, softened


1 cup firmly packed light brown sugar

1 tsp pure vanilla extract


1 cup milk-chocolate chips Heat oven to 350掳F. Lightly coat 2 baking sheets with cooking spray. In blender, process oats until finely ground but not powdery. Combine with flour, baking powder, baking soda, and salt in a bowl. In a clean blender, puree beans and 2 tbsp reserved bean liquid until smooth. Combine bean puree, butter, sugar, eggs, and vanilla in a separate bowl and beat well. With the mixer on low speed, beat in oat and flour mixture. Stir in chocolate chips by hand. Drop batter (by the tablespoon) onto baking sheets. Bake 15 to 17 minutes until centers are firm and edges are lightly browned. Transfer to wire rack to cool.





Only 105 calories and 3 grams of fat!

Use brown sugar instead of white sugar and if you want it low in calories use Splenda Brown Sugar.
Any oatmeal cookie will be chewier if you use brown sugar rather than white sugar, or a combination of the two. Light brown sugar will work, but dark brown makes the softest cookie. And if you use steel cut oats, it's a healthy cookie. Use real butter, too. Low calorie? Probably not, but they're so good you don't need more than one or two.
