What is your favourite cheap fast recipe for a healthy meal?

we are talking about under 3 bucks of grocerys here!!! Tv chefs always use expensive ingredients and im poor. so give price of grocerys too and how you make it. il definately vote ppl on thisWhat is your favourite cheap fast recipe for a healthy meal?
CHICKEN FRIED RICE





6 oz. cooked diced chicken


1/4 c. low sodium chicken broth or bouillon


1 1/2 tbsp. low sodium teriyaki sauce


1 tsp. grated fresh ginger root


Pinch white pepper


2 tsp. vegetable oil


2 lg. eggs, lightly beaten


1/2 c. diced onion


1/2 c. shredded carrot


1 1/2 c. cooked white rice


1/2 c. frozen peas





In small bowl, combine chicken, 2 tablespoon water, chicken broth, teriyaki sauce, ginger and pepper. Set aside. In large nonstick skillet, heat 1 tablespoon oil. Add eggs; cook, stirring until set but moist. Remove egg to warm plate. Add remaining oil and heat. Add onion and carrot. Stir fry 3 to 4 minutes, until tender. Stir in rice and peas. Cook until rice begins to brown. Add chicken mixture and egg. Cook 5 minutes longer until heated through. 4 servings.What is your favourite cheap fast recipe for a healthy meal?

substitute quinoa (you can get it at mexican stores) for the rice in the above fried rice recipe and it is even healthier, and I use turkey breakfast sausage in my ';fried quinoa';. :-)

Here is one of those simple, throw-it-together dishes, and remains one of our favorites.


Goulosh





1 pound lean ground beef 1.69 per lb





1 small onion, chopped .59





8 ounces elbow macaroni, cooked .59





1 cup frozen corn or peas .89





1 can (10-3/4 ounces) condensed tomato soup, undiluted .89





1 can (8 ounces) tomato sauce 3 for a dollar sometimes





1/4 cup water





Salt and pepper to taste

1. In skillet, brown ground beef and onion; drain.





2. Combine all ingredients in a 2-quart casserole dish or small roasting pan; cover and bake in 350潞 oven for 30 minutes or until thoroughly warmed. Yield: 4 to 6 servings.
1lb of ground beef ( you should have some in freezer)


3 cans of ranch style beans ($.69 each)


1 can of tomato juice ($.89)


1 pkg of mccormick hot or mild chili seasoning ($.79)





Cook all together and throw into crock pot
Has to be a vego meal - meat is too expensive at least where I am.





My fave (its pretty basic): Tomato pasta (makes two good sized portions and sauce keeps well and also freezes well). I'd say its under $2 a serve





Get some packet pasta (cheap stuff about $1.00 AU)


A can of tomatoes (about $1) or ones that you've grown yourself.


A bit of tomato paste if you have it


An onion - diced


Garlic crushed - optional


Herbs (preferably from your garden) - whatever you like - a bag of mixed herbs from the supermarket is about 50c here.


Chilli or sweet chilli- optional





Basically, fry the onion in a little oil with garlic, if using, on medium heat, wait until soft and clearish, then add tomatoes and extras. Simmer for a few minutes add to cooked pasta and viola!


Add cheese if feeling extravagant - also works with cheap mince meat.





Another fave - grab whatever vegies you have, dice them fry them up on medium to high heat, add salt and pepper and enjoy with bread or as a side dish - add herbs and use combinations that you like- experiment - don't be afraid cooking like this will bring out the natural flavours - great way to use up vegies that are about to go off.





I know the feeling of wanting to cook fab meals but can't afford that extra ingredient. Something I have been doing is buying fresh blocks of parmesan - keeps for a while in the fridge but just adds an extra dimesion to meals - pasta especially.

Rice, Beans and veggies





5 c water, add chicken bouillon cubes, butter, soy sauce, whatever you have for flavor.


1 medium onion, chopped.


1 clove garlic, chopped


1 tsp herbs and 1 tbsp Taco seasoning





When the water boils, add 2 c converted rice.


Cook 20 minutes, until most of the water is absorbed.


Remove from heat.





Add 1 can of corn drained


1 can of diced tomatoes, partly drained


1 can of black beans, drained


1 can of green beans, drained OR 1 bag of frozen broccoli





Stir, return to heat for 5 minutes. Remove from heat and let sit 5 minutes





This costs under $5 and will feed one person for almost a week, makes a huge pot. You can use half the rice and water and skip the green vegetables also.


This is low in fat and has complete protein.
Get a bag of mixed veggies, just over a dollar and a can of chicken breast (near tuna) for a little over a dollar. Hopefully you have some spices on hand.
I was a little hasty and put a shrimp recipe. I get good buys on shrimp, but I removed that recipe. The chicken recipe below is inexpensive.








CHICKEN %26amp; ZUCCHINI WITH SALSA (SUPER Simple)


boneless, skinless chicken breasts


green pepper (cut in strips)


onion (sliced thin)


zucchini (sliced and cut in quarters)


jar of your favorite salsa





Put the chicken in a baking dish, put the peppers, onions and zucchini on top. Pour salsa over all.





Bake at 350 deg. F (175 C) for about an hour. You can cut into the check to check it. Spoon juices over during cooking a few times.





There you have it. If you like, you can buy the shredded reduced fat Mexican cheese mix to sprinkle over it. About 5 minutes before chicken is done, sprinkle on the cheese. Take out when it's melted and starts to brown.
Pasta !!! a great easy meal, with some chopped onion, garlic and a can of chopped tomatoes as the sauce, quick,easy and done under 30 mins. Another is a omlette with chopped onion and tomato ,cook then make sandwiches with it and eat...
