I need a really yummy recipe for a rather healthy snack?

I love making homemade goods like muffins,cookies,cake,etc. I need something like that and pretty much tastes the same but it can't be bad for you. PLEASE just give me a recipe or maybe 2 for a yummy but healthy treat.

Low fat low sugar chocolate triffle


**use all low fat, no sugar products to make and its still good and a lot less fatening!!!!





1 (19.3-ounce) package brownie mix or chocolate cookies crumbled


1 (3.9-ounce) package chocolate instant pudding mix


1 (7-ounce) container frozen non-dairy whipped topping, thawed


1 (6-ounce) bag milk chocolate morsels


Prepare brownie mix according to package directions in a 9 x 13-inch pan. Cool. Crumble or cut into small pieces.


Prepare chocolate pudding according to package directions, omitting the chilling procedure.


Place half of crumbled brownies in the bottom of a 3 quart trifle bowl. Top with half each of the pudding, whipped topping and chocolate morsels. Repeat. Cover. Chill at least 8 hours. Garnish with more chocolate morsels on top.
You can use Splenda for baking to cut down on the sugar. Whenever milk is called for, use skim milk. You can cut some of the oil by substituting applesauce. Try using egg whites instead of the whole egg. And put healthy things in your homemade goodies: dry fruits, nuts, lemon or orange peel, oats, even trail mix is a good addition. These are ways to help you continue making the snacks you love, but sneaking in a few healthy twists.
Here's a good and healthy muffin. These are called Monday muffins...I think there was once a series of muffins for each day of the week,,,but this is the only one I have from the series.





MONDAY'S MUFFIN





3 eggs


1 C. applesauce


1 1/2 C. granulated sugar


1/4 C. butter or margarine


2 tsp. vanilla extract


1 C. zucchini, grated


1 C. carrots, grated


1 1/2 C. raisins


1 C. pineapple, crushed and well drained


3 C. all-purpose flour


1 1/2 tsp. baking powder


2 tsp. baking soda


1/2 tsp. nutmeg


1 1/2 tsp. cinnamon


1/4 tsp. salt





Directions


Beat together eggs, applesauce, sugar, butter, and vanilla extract.


Stir in grated zucchini, carrots, raisins, and pineapple.


Mix together flour, baking powder, soda, nutmeg, cinnamon, and salt.


Stir flour mixture into egg / applesauce mixture just until dry ingredients are moist - do not over mix.


Spoon into 24 paper lined cupcake tins.


Bake at 350潞F for 25 - 35 minutes or until done.








LEMON CHEESECAKE





1 whole graham cracker, crushed, or 2 tbsp. graham cracker crumbs


1 pkg. (4 serving size) sugar free lemon gelatin


2/3 c. boiling water


1 c. lowfat cottage cheese


1 (8 oz.) container low fat cream cheese


2 c. lite whipped topping, thawed


1 c. reduced calorie cherry pie filling





Spray 9 inch pie plate lightly with nonstick cooking spray. Sprinkle bottom and side with the graham cracker crumbs. Completely dissolve gelatin in boiling water; pour into blender container. Add cottage cheese and cream cheese; cover. Blend at medium speed, about 2 minutes or until mixture is smooth.





Pour into a large bowl. Gently stir in whipped topping. Pour into prepared pan; smooth top. Chill until set, about 4 hours. When ready to serve, top with cherry pie filling.





Don鈥檛 forget Portion Control!





If you know you鈥檒l be tempted to eat more than 1 serving, you can also divide the mixture into cupcake holders to have individual servings.
Baked meringues are great! Only 20 calories per 2 inch in diameter one, plus no fat!





Ingredients:


-3 egg whites


- 1/2 tsp. cream of tartar


-3/4 cup of granulated sugar


- 1 tsp of vanilla





Beat egg whites on medium speed until foamy. Add cream of tartar, beat on high until soft peaks form. Gradually add sugar, one tbs and continue beating until mixture forms stiff peaks. Preheat the oven to 200 degrees and bake on a waxed baking sheet for two - three hours, or until completely hard and crispy, not gooey at all. Meringues should be one-two inches in diameter. Store in an airtight container. Enjoy!
I just make treats with Cereal. Mix in a bowl some Raisin Bran, Cheerios, Marshmallows, Nuts and mix in chocolate chips if you want. Place in micro for min or so and mix it up when chocolate melts. Then let it set up then enjoy a perfectly good snack.
