Does anyone have a recipe for a healthy birthday cake no chocolate or sugar allowed.?

I need a recipe for a birthday cake as it is my sons first birthday and I dont give him sugar, chocolate or sweetners and everyone need a birthday cake please help.Does anyone have a recipe for a healthy birthday cake no chocolate or sugar allowed.?
There is no refined sugar in this recipe. The sweetness comes from the fruit:





*Sugar Free Banana Cake*





- 2/3 c. banana, mashed


- 1/2 c. butter, softened


- 3 lg. eggs


- 3/4 c. water


- 2 c. unbleached flour


- 2 tsp. baking powder


- 1 tsp. baking soda


- 1 tsp. cinnamon


- OPTIONAL: 1 c. chopped walnuts OR 1/2 c. chopped walnuts %26amp; 1/2 c. raisins





Grease and flour a 9 x 13 inch pan. Beat together mashed banana and soft butter until creamy. Beat in water. In a separate bowl, beat eggs until very foamy. Beat into mixture. Blend in flour, baking powder, baking soda and cinnamon. Beat until smooth. Stir in walnuts or walnuts and raisins, if desired. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes or until a knife inserted comes out clean. Cool. Serves 8-10.





Here's another one using just fruit as sweetener. This one actually has frosting so it may make a better birthday cake. ---%26gt;





*Sugar Free Applesauce Cake*





- 3 eggs


- 1/4 cup vegetable oil


- 1 cup unsweetened applesauce


- 1 cup frozen apple juice concentrate, thawed


- 2 1/4 cups all-purpose flour


- 1 tablespoon baking soda


- 1 teaspoon ground ginger


- 1 1/2 cups ground almonds


- 2 Macintosh apples - peeled, cored and finely chopped


- 1 (8 ounce) package cream cheese


- 3 tablespoons unsweetened apple butter


- 2 tablespoons frozen apple juice concentrate, thawed





Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch square baking pan. Beat the eggs until they drop like ribbons from the beaters. Continue beating and add the oil in a thin stream. Beat in the 1 cup applesauce and the 1 cup unsweetened apple juice concentrate. Beat in the flour gradually until well blended. Add the baking soda, ground ginger, ground almonds and apples, mix to combine. Pour the batter into the prepared pan and bake at 350 degrees F (175 degrees C) for about 40 minutes or until the cake tests done. Let cake cool on a rack for 15 minutes before turning out of pan. Cool completely before frosting. Carefully slice the cake in half horizontally with a long serrated knife. Fill and frost with Apple Butter Frosting.





To Make Apple Butter Frosting: Beat the cream cheese until soft and fluffy. Gradually beat in the apple butter and remaining 2 tablespoons apple juice concentrate.Does anyone have a recipe for a healthy birthday cake no chocolate or sugar allowed.?

Carrot Cake


2 cups whole wheat flour


1 t. baking powder


1 t. baking soda


1/4 t. salt


1 1/4 cups water


1 1/4 cups dates, chopped


1 cup raisins


1 t. cinnamon


1 t. ground ginger


1/2 t. ground cloves


1/2 t. ground nutmeg


1/2 cup carrot, shredded


1/2 cup chopped walnuts


1/3 cup frozen orange juice concentrate, thawed








Lightly oil a 9-inch springform pan and set aside. In a small bowl, sift together the flour, baking powder, baking soda, and salt, and set aside. In a small saucepan, combine the water, dates, raisins, cinnamon, ginger, cloves, and nutmeg. Bring to a boil, reduce heat, and simmer for 5 minutes. In a large bowl, place the shredded carrots, pour the hot liquid mixture over the top, and allow to cool completely. Add the walnuts and orange juice concentrate to the carrot mixture and blend well. Add the dry ingredients to the wet ingredients and stir well to combine. Pour the batter into the prepared springform pan. Bake at 375 degrees for 45 minutes or until an inserted toothpick comes out clean. Serve plain or frost with Tofu Cream Cheese Frosting, or Fluffy Lemon Frosting, or Vanilla ';Buttercream'; Frosting, or other frosting of choice





or Carrot Cake


1/2 cup unsweetened coconut


180 g crushed pineapple with juice (240 g can)


1/2 cup butter or margarine (softened)


2 eggs beaten


1 teaspoon stevia extract


2 - 3 tablespoons fructose or date sugar


1/3 cup yogurt


60 ml milk


1 teaspoon vanilla extract


1/2 teaspoon maple flavouring


1/2 cup chopped walnuts


2 cups grated carrots


1 cup pastry flour


1 cup unbleached white flour


2 tablespoons soy flour


2 teaspoons baking powder


1 teaspoon baking soda


1 1/2 teaspoon cinnamon


1/4 teaspoon salt





Preparation





Preheat oven to 175 deg C.


Oil a 25 cm x 15 cm cake pan.


Soak the coconut in the pineapple and juice.


Use all the juice from an 240g can of pineapple


but only 180 g of the pineapple. Set aside.





Soften and cream the butter (or margarine) in a large mixing bowl. Gradually cream in the beaten eggs (they need to be at room temperature). Don't worry if the butter separates. Add the stevia and fructose (or date sugar).


Thin the yogurt with the milk and add to the butter. Mix in the vanilla and maple flavoring. Stir in the walnuts, soaked coconut, pineapple and carrots.


Sift the flours, leavenings, cinnamon, and salt together twice in a separate bowl. Fold the sifted dry ingredients into the wet, stirring just until blended. Batter will be stiff.


Spoon batter into cake pan and bake for 1 hour. Cool in the pan.


Release the pan and top with cream cheese icing.
Is there a medical condition that your son has, like, Diabetes that would prevent you from giving him a little bit of sugar on his birthday?? If he doesn't have diabetes or a medical condition that prevents him from having sugar, then I would go ahead and give your son a treat of a real nice 'sweet' birthday cake of his favorite flavor. A birthday is only once a year, and I really don't see anything wrong in giving him a real birthday cake on his birthday. It's his day to be spoiled in every way. :-) But if he has a medical condition, then I would try a diabetic cake. You can find recipes for it. Just do a Google Search for Diabetic desserts and go from there. Happy Birthday to your son.
A birthday cake without sugar is like tea without milk. And i doubt you'd be able to do it without sugar as that weight keeps the cake proportions correct and makes the structure of it not sunken etc. I think it would be wiser to make one that uses honey, a natural sweetener. :)

Carrot cake with cream cheese icing. It does have sugar I'm afraid, but is pretty good in all other respects.





Cake:


200g flour (could be wholewheat)


2tsp baking powder


100g Finely grated carrot


100g butter


100g brown sugar


grated rind of lemon or orange


2 eggs. lightly beaten


30ml milk





Icing:


150 cream cheese


100g Icing sugar





Method:


Cream together butter and sugar, then add the rind and eggs. Beat until smooth. Add carrot, then gradually add the flour and milk to make a soft mixture. Fill a greased tin and bake at 160 degrees (pre-heat the oven) for 45-60 mins until well risen and golden brown. Allow to cool completely. Slice horizontally in half.





Mix together the cream cheese and icing sugar and use it to fill and top the cake.





Bingo - now all you need are candles!
well you could do a sponge type thing, you can get sugar free cream, jam, sugar (?)(what a world), but may i suggest maybe a carrot cake, get a recipe and use alternatives to whatever you dont want to use, and you can add layers of fresh fruit, oranges etc, to decorate, you should be able to make some sort of low fat icing I should imagine. Personally I'd have chocolate with chocolate icing and layers of fresh chocolate. Just make a trifle.
Most cakes have sugar in it as this is a sweet food.





The best you can try to achieve is to reduce the amount of processed sugar you use.





An easy mix is a 4-4-4 mixture. 4 oz flour, 4 oz cooking marg, 4 oz caster sugar, 2 eggs (duck eggs if you can get them).





Combine the sugar and the marg until smooth. Mix in the flour and eggs until you have a smooth batter.





Pour into a 7'; round tin and bake for 35 minutes on a medium oven.





Use can use fresh fruit as a filling with low fat whipping cream.

Found this recipe for a savoury cake. It's the sort of cake you can add more savoury ingredients if you want.





Ingredients :


3 eggs


225g self raising flour


150ml oil


diced ham


cheese, garted, to taste





Recipe :


1-Sieve the flour into a bowl


2-Add the beaten eggs.


3-Add the oil.


4-Mix the pastry well, making sure you add lots of air.


5-Add the cheese and ham. You can also add olives and anything else you can think of.


6-Pour into a greased cake tin.


7-Put in oven for 45 minutes, at 350掳F (180掳C.


8-Once cooked, a knife inserted into the middle of the cake should come out clean. Leave to settle for a few minutes and serve.








Advice :


Try varying the recipe a little, with olives, feta or tomatoes, or replace the ham with red pepper or other vegetables for a vegetarian option.

I can't believe you won't even give him a little piece of a normal cake. That's really messed up and he will resent it later in life. Fine don't give it to him any other day of the year, but at least on his birthday. It's only one day and he would really enjoy it. Unless, it's medically necessary that he not have sugar, chocolate or sweeteners, you should make an exception for his birthday.





The only cake I know of that doesn't have any of those ingredients is made of mud and water and you form it into a cake. It's called Mud Cake Surprise! I used to make them outside when I was a kid. Maybe you can let him make you one on your birthday and you have to eat it.... Happy Birthday to you!
