Pasta Primavera





3 carrots, peeled and cut into thin strips


2 medium zucchini or 1 large zucchini, cut into thin strips


2 yellow squash, cut into thin strips


1 onion, thinly sliced


1 yellow bell pepper, cut into thin strips


1 red bell pepper, cut into thin strips


1/4 cup olive oil


Kosher salt and freshly ground black pepper


1 tablespoon dried Italian seasoning


1 pound farfalle (bowtie pasta)


15 cherry tomatoes, halved


1/2 cup grated Parmesan





Preheat the oven to 450 degrees F.


In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.


Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.


Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.











Pasta with Roasted Bell Peppers and Basil





1 pound Penne or other short pasta


1 Tablespoon olive oil


2 cups chopped onion


陆 teaspoon crushed fennel seeds


2 cloves garlic, minced


1 (14 陆 ounce) can whole tomatoes, un-drained and chopped


3 pounds (6 large) bell peppers, roasted %26amp; peeled (red %26amp; yellow work the best)


陆 tsp salt


录 tsp freshly ground pepper


陆 cup thinly sliced fresh basil


陆 cup fresh ground Parmesan cheese (or more to taste)








鈥?Cook pasta per package instructions and drain. Keep warm.


鈥?Heat oil in a large non-stick skillet over medium low heat. Add onion, fennel seeds and garlic, cover and cook 10 minutes (stirring occasionally) or until onion is tender.


鈥?Add tomatoes and bring to a boil, reduce heat and simmer uncovered 30 minutes, stirring occasionally.


鈥?Meanwhile, cut roasted peppers into Julienne strips. Add pepper strips, salt and pepper to tomato mixture and heat for 3 minutes.


鈥?Combine pasta, tomato mixture and basil into a large bowl, sprinkle with Parmesan at the table.











In case you don鈥檛 know how to roast bell peppers:





鈥?Halve, seed and remove the membranes and stems from the bell peppers


鈥?Flatten, skin side up, onto a vegetable sprayed foil on a cookie sheet


鈥?Place under broiler for 10-15 minutes, watching very closely


鈥?When skin is mostly black, remove to a paper bag and refrigerate


鈥?After cooling 15 minutes or so, remove and discard the blackened skin











Lazy Gourmet Chicken





1 tbls sugar


录 cup vinegar


陆 cup soy sauce


4 garlic cloves, minced


戮 tsp salt


1 tsp pepper


2 陆 - 3 # fryer, cut up or 2-3 pounds legs/thighs/breasts





Combine all ingredients except chicken in a large, tightly lidded saucepan and bring to a boil. Add chicken pieces and coat each well. Keep covered and reduce heat, simmer 35-40 minutes, basting several times along the way.I want to make a nice, healthy dinner for my family. Ideas and recipes?

The key to eating healthy is knowing exactly what goes into your foods and baking is a much healthier option to frying foods.
if you are going to use meat use grilled chicken breast.you can make a variety of vegetable sides.you can also grill fish or shrimp if you like seafood.you can grill any of those meats with lemon or lime juice.you can also serve salad on the side.enjoy
