What's an EASY recipe for a healthy, yummy soup?

chop up carrots, celery and onion. saute in some olive oil.





chop up fresh veggies like potato, zuccini, cabbage, (whatever you like).





for canned stuff, get some kidney beans, peas, corn, stewed tomatoes, tomato sauce or paste.





chop up some fresh parsley, basil and garlic.





if you like meat, add some chopped up baked chicken.





dump all of the above into some chicken broth. cook for a couple of hours. mmmmmmmmmWhat's an EASY recipe for a healthy, yummy soup?
5 or 6 large potatoes, peeled and cubed


2 leeks cut into round slices


3 carrots, roughly chopped


5 celery sticks, cut onto chunks


1 cup of dried pearl barley


2 heads of swiss chard (or similar green leaf such as leaf beet or a couple of handfuls of spinach), chopped


enough water to cover


Salt and pepper to taste





Very simple to prepare this one! Place all your vegetables except the chard in a large pan with the barley. Cover well with water, boil and simmer until everything is cooked. Add the chard and salt and cook for another 5 minutes.What's an EASY recipe for a healthy, yummy soup?

Chicken Chunks.


Rice.


Diced Carrot.


Diced Celery/Sliced Leek.


Diced Onion .(medium)


More Vegetables.


Add all except the Rice and Extra Vegetables to a decent sized pot or stock pot.


Stir fry until the chicken has a little colour and the other vegetables are soft.


Add a little water to de glaze the pot and add as much for the size you want. (2 litres)


Bring to a boil and add rice. Return to boil then reduce to a rolling simmer.


Go through the freezer and take out all of those part bags vegetables and add.


Go through the fridge and look for what else to add.


Stir from time to time.


The rice will absorb a lot of liquid so that may need to be topped up.


Season to taste, and plate up.


Serve with Garlic Bread.
Roughly chop potatos, onions garlic (that can be whole cloves), and carrots. Toss with a bit of olive oil, salt and balck pepper. Roast in the broiler. Toss in the food proccessor or blender with a hanful of spinach, and ai bit of chicken broth. All you have to do is heat it up a little on the stove and it is warm and delicious. :)You can put a bit of milk or cream with the broth if you like...
I would go for French onion soup!
