I need a recipe for simple and healthy homemade spaghetti sauce?

I have been cooking a lot and consider myself a pretty good cook. However, I can't seem to get spaghetti sauce right. I am looking for a good, basic homemade recipe that I can be creative with. I am ok with using a store bought sauce as a base but I am watching my sodium also so I like to use some no salt added sauce and tomatoes for part of the recipe. Any ideas?I need a recipe for simple and healthy homemade spaghetti sauce?
Look for Pomi brand strained tomatoes. They are packaged in a cardboard box, and contain NO additives. The ingredients list only says ';tomatoes.'; Here's my recipe! I just eyeball, but I'll try to give you relative measurements....





one onion


4 cloves garlic


1 c. red wine


3 T. brown sugar


2 t. nutmeg


salt and pepper to taste


1/2 c. fresh basil chopped





Finely chop the onion and garlic.


Saute in olive oil on medium high heat until translucent and just starting to get color.


Pour in the wine to deglaze the pan. Allow it to simmer for 5 minutes.


Add tomatoes and the rest of the ingredients.


Bring to a bubble, then simmer on low for at least 30 minutes.





The brown sugar cuts out the tanginess of the tomato (some people use carrots for this....I prefer the sugar). The nutmeg is a nice touch. It adds just a touch of kick! If you don't have fresh basil, then leave it out (don't substitute with dry).





If you want to add meat, try 1lb. of ground beef and 1 lb. of Italian sausage. Brown the meat after the onions cook. And the sauce is enough for one lb. of pasta. I usually put the cooked pasta into the sauce and let it cook for 5 minutes longer or so.I need a recipe for simple and healthy homemade spaghetti sauce?
Spaghetti Bolognese











Ingredients serves 6





500g beef mince


4 onions chopped


4 400g tins of chopped tomatoes


200g tomato puree


8 tablespoons olive oil


1 teaspoon salt


1 teaspoon pepper


2 tablespoons oregano


two cloves of garlic


1 tablespoon honey


1 teaspoon paprika


one glass (125ml) red wine


1 teaspoon chili powder





Method





1. Pour olive oil into a large saucepan, add the onions and crushed garlic and fry them in the olive oil until they soften.





2. Add the dried spices to the onion mixture, stir-in and cook until they release their aroma. Then stir in the beef and mix well. Add the tinned tomatoes and leave to cook down for about 5 minutes.





3. Now crumble the mince into the onions and fry it until it is completely brown (no red bits left). Simmer the mince and the onions while stirring to let some of the water that has accumulated evaporate.





4. When the mince is nice and crumbly, pour in the red wine, and simmer for 3 or 4 minutes.





5. Now add the tomatoes, the tomato puree, the honey and the spices. Let the whole lot simmer for an hour with no lid on the saucepan - this will allow the sauce to reduce and get rid of some of the water.

i did this one all by myself but i llooooove it


what i do is..


i cut garlic and onions and fry it in oil


get 2 heaping tablespoons of tomatoe paste and mix it wit water till smooth


i put that in..


i get a cup or half a cup(as muchas u want) of parmesian and mazaella cheese mixed and throw it in..


it melts right in it...


also add veggies to it..to giv more flavor.


salt pepper..chilli flakes


and yea thats bisically it


i dont like sauces taht are too sweet

For a good beefy base try cooking a chuck pot roast using a salt free v-8 juice, couple cans or fresh tomatoes, garlic,onions,celery, cook until done to your taste. Serve the roast by itself or fork pull apart and serve over spaghetti or reserve the sauce for another day.
All i do is use a tin of chopped tomatoes, add some tomato puree, and then thow in whatever i've got lying around for flavouring...herbs, spices, curry powder etc.





With chicken, chopped veg...anything i can find. It's not the most exciting of things but it's healthy enough and you can use up leftovers and stuff =]
It might add some salt, but it tastes good. cut up some (uncooked) spicy italian sausage links and simmer in the sauce. Adds a lot of flavor. You can let someone else eat the sausage chunks if you don`t want to. Is that too unhealthy ?
