Chicken,Feta cheese and Sundried Tomato Wrap





INGREDIENTS:


2 (4 ounce) skinless, boneless chicken breast halves


1/4 cup sun-dried tomato dressing


8 sun-dried tomatoes (not oil packed)


1 cup boiling water


1/3 cup crumbled feta cheese


4 cups loosely packed torn fresh spinach


4 (10 inch) whole wheat tortillas


1/4 cup sun-dried tomato dressing


DIRECTIONS:


In a large resealable plastic bag, combine chicken breasts and 1/4 cup dressing. Seal, and refrigerate for several hours.


Preheat grill for high heat. Combine sun-dried tomatoes and hot water in a small bowl. Set aside for 10 minutes, drain, and cut tomatoes into thin slices.


Lightly oil grill grate. Discard marinade, and place chicken on grill. Cook for 12 to 15 minutes, turning once, or until done.


Cut chicken into strips, and place in a medium bowl with sliced tomatoes, feta, and spinach. Toss with remaining 1/4 cup dressing. Distribute mixture between the four tortillas, and wrap. Either cut in half and enjoy cold, or place briefly back on grill until the tortilla turns warm and crispy.Favorite Healthy Recipe?

I invented a veggie wrap. Take a tortilla shell, put two pieces of swiss cheese on it spread some hot pepper jelly on it, top it with some spinach (I thaw out some frozen)and diced tomato, wrap it and fry it in light olive oil with chopped garlic. It is soooo good.
Dessert would have to be lemon sorbet served with vodka but only real Russian Vodka none of your supermarket own make rubbish [ well it makes me feel good] or banana profiteroles with hot butterscotch sauce but to make it healthy don't put chocolate on the profiteroles.you are welcome

I really like fish tacos





Grill some fish nuggets, put em on a wheat tortilla with some shredded red cabbage, ff sour cream, low fat shredded cheese, maybe some hot sauce. Yummy.

It's a power salad!
Egg white omelette with chopped fresh veggies (red %26amp; green peppers, mushrooms, onions) with some salsa on the side. Best yummy, healthy breakfast ever!
INGREDIENTS:


2 large eggplants


1/4 cup lemon juice


1 pinch salt


1 tablespoon olive oil


1 cup plain yogurt


1/4 cup tahini


1/2 teaspoon teriyaki sauce


1 clove crushed garlic

DIRECTIONS:


Wash both eggplants, and pierce them with a knife. Place eggplants on a cookie sheet, put them in a 500 degrees F (260 degrees C) preheated oven for 15 to 20 minutes. After eggplants are baked and cooled, peel the skin off. Put eggplant in a mixing bowl.


Stir in the lemon juice, salt, olive oil, and plain yogurt. Mix ingredients until smooth. Stir in tahini according to taste. When all ingredients are added, transfer the dip to a serving bowl. Stir in teryiaki sauce and garlic. Refrigerate until you are ready to serve.
It's kind of spicy but I love it. Thin rice noodles cooked drained, and drizzled with sesame oil then a nice salad of lettuce, red cabbage, sliced cucumbers and dried seaweed, half a boiled egg and kimchi (if you'd like) on top with a nice spicy and sweet korean hot sauce.





I first tried this at a restaurant, then I looked at it, and it's soooo easy to make, just need the right sauce! So good, soooo very healthy, you can lighten on the hot sauce though, there's a reason it's for dipping, and you can cook the noodles or place the amount of salad you want in it, for me, it all ends up in my mouth and lots of the sauce too!
