Healthy carrot cake recipe anyone?

recently ive taken to carrot cake, ive been eating weight watchers low fat carrot cakes, but they're not as healthy as they make out,so ive decided to try making my own, if anyone has any good recipes i would be dead greatful

Living Carrot Cake with Lemon Cashew Frosting





Carrot Cake


1 cup soaked, raw almonds


1 1/2 cup soaked raisins (save water)


1 cup pitted dates, soaked and drained


6 cups carrot pulp


1-2 teaspoons cinnamon


zest of one lemon and one orange





Lemon Cashew Frosting


2 cups soaked cashews


1 cup soaked raisins


1 cup soaked dates


juice of one lemon





In blender, place almonds, raisins, dates, and raisin water. Mix. Add to a bowl and add pulp, spices, and zest.





For frosting, blend cashews and their water with the dates and their water and lemon juice until smooth.





Line 10-inch pie pan with plastic wrap and press cake mixture into it. Turn out onto plate and remove plastic. Spread frosting over. Do the second layer the same and spread frosting over all.





Delicious!

Swiss Carrot Cake


A moist carrot cake with a lemon icing





INGREDIENTS


5 egg yolks


1 1/4 cups white sugar


1 1/2 cups finely chopped almonds


2 cups grated carrots


1 lemon, zested and juiced


2/3 cup all-purpose flour


1 1/2 teaspoons baking powder


5 egg whites


1 pinch salt


1 lemon, juiced


1 cup confectioners' sugar, or as needed





DIRECTIONS


Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square baking dish or 9 inch Bundt pan.


In a large bowl, whip egg yolks and sugar with an electric mixer until light and fluffy. Stir in the almonds, carrots,1 lemon's juice and zest, flour and baking powder. In a separate bowl with a clean beater, whip egg whites with a pinch of salt until they can hold a peak. Fold egg whites into the carrot batter. Pour into the prepared cake pan.


Bake for 50 minutes, or until a small knife inserted into the center comes out clean. For icing, mix the remaining lemon's juice with confectioners' sugar until it can be drizzled easily from a spoon. Pour over the cake while warm or cooled. If making in a Bundt pan, remove from the pan before glazing.

I'm sorry, I couldn't possible ruin something as wonderful as carrot cake with healthy ingredients. If weight watchers says it is ok to eat, don't look at the label, just enjoy it. Or, skip it altogether.





Life is too short to skimp on some things. Just pick your things carefully.
