I need a healthy recipe for dinner tonight. What can I make?

I'm an amatuer cook. I want to make something really delicious but healthy tonight for my girlfirend. We are both trying to be really good about what we eat, but I need some ideas! She does not like mushrooms at all, so those are out. Most veggies are good, but I'd like some kind of meat in the dish as well. Thanks!I need a healthy recipe for dinner tonight. What can I make?
Place a Salmon filet (Kroger) in top of a piece of aluminum foil


Drizzle olive oil (not too much) over the fish (keeps it moist)


Cut a lemon in half and squeeze out one half of the lemon over the fish


Add a bit of pepper or some sort of fish seasoning


Bring the ends of the foil together and fold over to make a sealed pouch


Pre-heat the oven 325 degrees..cook for 20 minutes - or throw it on the grill for about 20 minutes. You can leave the skin on....the meat will pull off easily when it's finished





If grilling, you can also grill some asparagus - 6 minutes (rotate after three minutes). Prior to grilling, drizzle a little olive oil and mix together with your hands. If not, you can buy a vegatable steamer contraption at Kroger that will fit in any pot. It only costs about $5 and you can find it on the aisle where they keep the utensils. All you have to do is set the steamer in a pot, boil the water (add a pinch of salt), add the asparagus (cut off stems first..about one inch from the bottom), and leave it covered for about 8-10 minutes.





Add in a side salad - balsamic vinegarette - sprinkle a little parmesan cheese over the top..





You can't miss with this...it's easy to make (hard to screw up), it's healthy, and tastes good. Plus, it looks like you did a lot a work! She'll think you are a chef...Trust me!I need a healthy recipe for dinner tonight. What can I make?
Lemon garlic chicken


Angel Hair pasta


Mixed Green Salad





Pour some olive oil in a skillet %26amp; heat. Add a couple of cloves of minced garlic %26amp; saute. Flatten out your chicken breasts, season with S%26amp;P, brown on both sides. Squeeze a couple of lemons over all, cover %26amp; cook through.





Boil %26amp; drain the angel hair. Plate with pasta %26amp; a chicken breast on top. Pour lemon/garlic pan juices over all.





Make a mixed green salad - Mixed greens, tomatoes, thinly sliced red onion rings, sliced avocado, (croutons). Drizzle with red wine vinaigrette.





Serve with warm crusty Italian bread (optional). Fresh fruit for dessert - watermelon, strawberries, blueberries, peaches etc).





Woila! Easy, healthy dinner.
I love Alfedo sauce but not the saturated fat in the traditional recipe. This recipe allows me and my family to enjoy the creamy-cheesy goodness in a healthier way!


Ingredients


1/2 lb Uncooked whole wheat or durum semolina fettucine or penne pasta


2 tbsp Olive oil


1 tsp Grated garlic(optional)


1 cup Parmesan cheese


3 tbsp Sour cream


1 cup Lowfat milk


1 cup Cooked vegetable(asparagus or green peas are good)


2 cups Cooked chicken, in chunks


Fresh ground black pepper to taste





Preparation





Boil water and add pasta. cook until tender. Drain.








Heat oil in sauce pan.Cook garlic in oil. Add cheese to oil and melt.





Stir sour cream into melted cheese.





Add milk slowly to sauce. Turn off heat when sauce begins to congeal. Fold vegetables into sauce. Fold chicken into sauce. Fold drained pasta into sauce and coat all noodles. Garnish with black pepper if desired. Serve immediately.



Go to the freezer section of the grocery store and get either a bag of stir fry veggies (they will say on the bag) or pepper and onion strips. Build from there. If you choose stir fry get some chicken or pork and some long grain rice and some stir fry sauce. follow the directions on the bag or bottle of sauce. If you grab pepper strips your doing fajitas and you wll still need chicken but also wheat fajita wraps, sour cream and a packet of fajita seasoning. These are easy and pretty fool proof. this is very easy even for a newbie cook like your self








cube the potates spinkle with, rosemary or a couple of fresh sprigs and either garlic powder or chopped garlic, splash with olive oil and roast in a hot oven(425) until they test done with a fork poked in that easily pull out with out resistance
A bit of beef enchilada would not be anything wrong with mashed potatoes.
