Sweet Potato Pie Recipe








A delicious pie with no guilt! Sweet potatoes are an excellent health food: they are packed with Vitamin A and also have vitamins C and B6, as well as manganese and a bit of potassium. Forget about the canned versions, though -- they are usually high in sugar and lower in nutritional content than fresh sweet potatoes. It's easy to make a healthy and tasty sweet potato pie with this recipe; however, the baking required does take time.





(8 servings)





Ingredients





9'; pie crust





4 sweet potatoes





2/3 cup skim or soy milk





1 tbs cornstarch





1 tsp pumpkin pie spice or


1/4 tsp cardamon





1/4 tsp cinnamon





1/4 tsp nutmeg





1/4 tsp ground ginger


olive oil





Directions





Preheat oven to 375 F.





Wash sweet potatoes clean, then pierce several times.





Heat sweet potatoes until very soft.


Microwaving: Place sweet potatoes on a paper towel and microwave for 13 minutes, then wrap in aluminum foil and let stand for 10 minutes.





Baking: Preheat oven to 375 F. Place sweet potatoes in a baking dish and bake for 60-90 minutes, or until very soft.


Let cool, then peel and mash.





Reduce oven heat to 350 F.





Blend sweet potato mash and the rest of the ingredients until creamy.





Spoon pie mix into crust.





Bake for 1 hour. Pie is done when knife inserted into middle comes out cleanly.





Serving Ideas





Garnish pie with crushed walnuts or pecans.





Top pie will a dollop of fat free, sugar free whipped cream.
The worst thing when you're trying to eat a healthy diet is the way it's so easy to go out and get something fattening from the sandwich shop at lunch time. I find if I do this, I don't just get a sandwich but a bag of crisps or a bar of chocolate too.

4 cups water


1 (3 1/2-ounce) bag boil-in-bag long-grain rice


2 1/4 cups chopped asparagus (about 1 pound)


1 tablespoon peanut oil


1 tablespoon sugar


2 tablespoons rice vinegar


2 tablespoons low-sodium soy sauce


1 teaspoon bottled minced ginger


1 teaspoon hot chili sauce with garlic (such as KA鈥E)


1 pound extrafirm tofu, drained and cut lengthwise into 9 pieces


1 teaspoon salt, divided


1/4 teaspoon black pepper


3/4 cup preshredded carrot


1 teaspoon dark sesame oil





Bring 4 cups water to a boil in a 2-quart saucepan. Add bag of rice, submerging bag completely in water. Boil 10 minutes. Carefully remove bag from pan, leaving boiling water in pan. Add asparagus to pan; cook 1 minute. Drain.


While rice cooks, heat peanut oil in a large nonstick skillet over medium-high heat. Combine sugar, vinegar, soy sauce, ginger, and chili sauce in a small bowl. Sprinkle tofu with 1/2 teaspoon salt and pepper. Add tofu to pan; cook 3 minutes on each side or until browned. Add soy sauce mixture; cook 20 seconds, stirring constantly. Remove from heat. Combine rice, asparagus, 1/2 teaspoon salt, carrot, and sesame oil. Serve tofu over rice.

Sesame Chicken





3 whole boneless chicken breasts





Marinade:


2 tablespoons light soy sauce


1 tablespoon cooking wine or dry sherry


a few drops of sesame oil


2 tablespoons flour


2 tablespoons cornstarch (corn flour)


2 tablespoons water


1/4 teaspoon baking powder


1/4 teaspoon baking soda


1 teaspoon vegetable oil





Sauce for Sesame Chicken:


1/2 cup water


1 cup chicken broth


1/8 cup vinegar (Guide notes: I find that a little low. It all depends on how sweet you want the sauce; for a sweeter sauce use less vinegar)


1/4 cup cornstarch (corn flour)


1 cup sugar


2 TB dark soy sauce


2 TB sesame oil


1 tsp chili paste, or more if desired


1 clove garlic (minced)





2 tablespoons toasted sesame seeds





3 1/2 - 4 cups peanut oil for deep-frying








Directions:


Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.





To prepare the sauce: mix together all of the sauce ingredients. Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.





To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.





Just before you are finished deep-frying, bring the sauce back up to a boil.





Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice.

Serves 3 to 5





Ingredients:


4 cups cold cooked rice


2 large eggs


1 teaspoon salt


1/2 teaspoon pepper


4 tablespoons canola, corn, or peanut oil


1/2 cup thinly sliced scallions or diced onion


1 teaspoon thick soy sauce*


1 cup fresh peas, parboiled, or thawed frozen peas


1 cup diced carrots, parboiled or thawed frozen carrots


1/2 cup diced cooked ham, chicken, turkey or pork


1 cup fresh bean sprouts





Directions:





Place the rice in a large bowl and use your fingers to break up any lumps. Set aside. Beat the eggs in a separate bowl with the salt and pepper. Set aside.








Pour the oil into a wok or stir-fry pan and place the pan over medium-high heat. When the oil is hot but not smoking, add the scallions; they should sizzle. Stir for about 15 seconds. Stir the beaten eggs into the pan with a spatula and scramble until the eggs are dry and separate.








Add the rice to the eggs and mix thoroughly. Pour the soy sauce evenly over the mixture. Add the peas, carrots, ham, and bean sprouts. Stir constantly until all the ingredients are well mixed and heated through. Serve the fried rice immediately.





*Available in Asian markets. You can substitute dark soy sauce, but you will need to add more than 1 teaspoon to get the same dark color.

ooh I would do Foo Young, its like an omlette and you can add any meat/ seafood, Chinese stir fry veg.


To give it that authentic Chinese flavour, I would add one drop, because its so strong, of fish oil and 2 drops of sesame oil when you are whisking the eggs.





Or do salmon teryaki with noodles or brown Rice, fry your salmon and add to water to prevent sticking, a little sesame oil, teryaki sauce, chilli and lots of garlic and season. Boil noodles, when salmon cooked, keep warm in a n oven and place noodles in pan where the salmon was and toss the noodles through. Yummy!

Kung Pao Chicken





陆 cup light corn syrup


陆 cup Kikoman teriyaki sauce and marinade


4 tbs white port wine, or any sweet wine


2 tbs cornstarch


4-5 boneless chicken breasts, cut in 陆 in strips


3 tbs oil


1-3 tsp crushed red pepper


1 cup honey dry roasted peanuts, no salt


录 cup green onions, chopped








In a small bowl, sir together corn syrup, teriyaki sauce and wine, set aside. In medium bowl or zip lock bag, add cornstarch and chicken. Mix or shake well to coat.





In large skillet or wok, heat oil over medium high heat. Add red pepper; stir fry 10 seconds. Add chicken mixture; stir fry 2 to 3 minutes or until chicken turns white. Stir in peanuts and corn syrup mixture. Stirring constantly, bring to boil over medium high heat and boil 1 minute. If sauce doesn鈥檛 thicken enough, add a little cornstarch mixed with cold water. Garnish with green onions and heat through, but don鈥檛 cook. Serve with fried or white rice.
chicken, baby sweetcorn, carrots, savoy cabbage, mange tout, ketcap manis ( or soy sauce) bit of chicken stock if you want some extra liquid. just stir fry them all together starting with the chicken then add the carrots mange tout and any other veg u want then the liquids and finally the cabbage( cabbage only takes couple of minutes. then have egg noodles. these are best. either serve them in a bowl on the side or mix them in wiith your other meat and veg. this recipe iss so nice. i cooked it for ma family last night. they alle loved it and an extra bonus - - - ITS ALL HEALTHY!!


p.s u can add bit of chilli powder if u want a bit of a 'kick'

Spicy Turkey Chili





This a very hearty and spicy chili, one I believe all will love! Serve topped with Cheddar cheese.





INGREDIENTS:


2 (5 ounce) cans turkey meat, drained


2 (15 ounce) cans kidney beans


2 (14.5 ounce) cans Italian-style stewed tomatoes


2 (1.25 ounce) packages chili seasoning mix


1 (4 ounce) can green chile peppers


1 (8 ounce) can tomato sauce


1 onion, diced


1 cup water





DIRECTIONS:


In a slow cooker, combine turkey, beans, tomatoes, chili seasoning, chile peppers, tomato sauce, onion and water. Cook on low 3 to 4 hours. Serve hot.





Baked Slow Cooker Chicken





Baked chicken in a slow cooker for busy people! Put the chicken on in the morning, and have golden brown baked chicken for dinner.





INGREDIENTS:


1 (2 to 3 pound) whole chicken


salt and pepper to taste


1 teaspoon paprika





DIRECTIONS:


Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.


Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.


Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.I need a healthy crockpot recipe?

MY secret nuggets...enjoy!





1/2 stick unsalted butter


2 garlic cloves minced


1 cup fine fresh bread crumbs


1/4 cup freshly grated Parmesan cheese


1 whole boneless skinless breast cut into 1-inch cubes





Preheat the oven to 400 degrees.


In a small saucepan melt butter with the garlic and let the mixture cool. In a shallow bowl or pie plate toss the crumbs with the Parmesan. Dip the chicken cubes first in the butter and then in the bread crumb mixture, making sure that each cube is coated well with crumbs. Arrange the chicken in one layer on a baking sheet and bake in the preheated oven for 15 minutes or until the chicken is just cooked through. Transfer to paper towels to drain.
Baked Chicken Nuggets





3 skinless, boneless chicken breasts


1 cup Italian seasoned bread crumbs


1/2 cup grated Parmesan cheese


1 teaspoon salt


1 teaspoon dried thyme


1 tablespoon dried basil


1/2 cup butter, melted


DIRECTIONS


Preheat oven to 400 degrees F (200 degrees C).


Cut chicken breasts into 1 1/2 inch size pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter/margarine in a bowl or dish for dipping.


Dip chicken pieces into the melted butter/margarine first, then coat with the breadcrumb mixture. Place well coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.
Use Shake and Bake for the Chicken Nuggets. Just cut up some bite sized boneless chicken and follow the directions on the box. They come out really good and it is fairly inexpensive.
CHICKEN NUGGETS





3 tbsp. butter, melted


2 tsp. Worcestershire sauce


1 pkg. of chicken breast nuggets or 4 fillet chicken breasts cut up into bite size pieces


50 wheat wafers, finely crushed


1/3 c. grated Parmesan cheese





Stir together butter and Worcestershire sauce in a bowl. Add chicken and toss to coat. In a plastic zip lock bag, add crushed wafers and Parmesan cheese. Add chicken pieces a few at a time and shake well to coat each piece. Place nuggets on a cookie sheet in a single layer and bake at 450 degrees for 7 to 9 minutes or until no longer pink.


Serves 4. Dip in barbecue, sweet and sour, or honey mustard sauce.








HONEY MUSTARD SAUCE


1 part honey


1 part mustard





Stir honey and mustard together.
Just buy some chicken breasts, cut them into small pieces, coat them with egg and breadcrumbs and then fry them for about ten minutes in hot oil ! ! !

6 small poblano peppers or Anaheim chiles


4 ounces Monterey Jack cheese, cut into 6 long strips


1/4 teaspoon dried oregano, preferably Mexican


1/4 cup all-purpose flour


1/4 teaspoon sea salt


2 large egg whites


1 tablespoon canola oil


3/4 cup Ancho Chile Salsa (recipe follows)





1. Char peppers (or chiles) on all sides directly over a gas flame until the skin blackens and blisters, or broil directly under a preheated broiler until the skin blisters and begins to pull away from the pepper. Wrap in paper towels until cool.


2. Use the paper towel to carefully rub off the blistered skin. Leave the stems on. Make a 2-inch slit lengthwise in each pepper and remove the seeds. Tuck a piece of cheese into each pepper and fold the pepper over to completely enclose the cheese.


3. Working over a shallow bowl or plate, rub the oregano between your palms to bring out the flavor. Add flour and salt and stir to combine. Put egg whites in another shallow bowl or plate and lightly beat until frothy. Dip each pepper into the flour mixture to coat on all sides, brush off any excess, then dip into the egg whites.


4. Heat oil in a large nonstick skillet over medium heat. Carefully set each pepper into the hot pan and cook until the cheese is melted and the peppers are golden brown on both sides, about 5 minutes total. (If you have larger peppers, you may need to cook them in two batches.) Serve warm with 2 tablespoons Ancho Chile Salsa each.

    Tangy Sweet Broccoli Salad With Splenda


    (NOTE THAT THIS IS A HEALTHY RECIPE)





    This is a tangy sweet broccoli salad which is normally made with quite a bit of added sugar and bacon. I replaced the added sugar with splenda and eliminated the bacon and it is still wonderful! A member of our family who does not normally eat brocolli, eats this salad.


    INGREDIENTS:





    1 Large Bunch Fresh Broccoli


    1 Med. Onion Diced (red or white)


    1 - 2 C. Shredded Extra Sharp Cheddar


    1 C. Lite Mayo


    3 Tbls. Cider Vinegar


    Splenda


    Variations: Broccoli / Cauliflower blend - This is very good as well.


    PREPARATION:





    Cut or chop broccoli into small pieces.


    Dice onion (we prefer larger pieces).


    Combine broccoli, onion and cheese in a large bowl and set aside.


    In a separate bowl, combine mayo and vinegar and blend well.


    Start adding stevia a tiny pinch at a time and stir well. You will want to end up with a nice tangy sweet taste somewhat like sweet pickles.


    Avoid over-doing the stevia as it may impart a bitter flavor.


    When the desired flavor has been reached, pour it into the broccoli mixture and blend it well.

    1 bunch broccoli

    DRESSING:

    1/2 large red onion, chopped


    1/4 cup red wine vinegar


    1/8 cup white sugar


    2 teaspoons ground black pepper


    1 teaspoon salt


    2/3 cup mayonnaise


    1 teaspoon fresh lemon juice





    DIRECTIONS:


    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.


    In a large bowl, combine broccoli, cheese, bacon and onion.


    Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

    Fresh Fruit Pudding Milk Shake





    Prep Time: 10 min Total Time: 10 min Makes: 4 servings, about 1 cup each





    What You Need: 3-1/2 cups milk 1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding, or any flavor 1 medium ripe banana, cut into chunks 1/2 cup strawberries Make It


    PLACE all ingredients in blender container; cover. Blend 1 minute or until smooth.
